CHOCOLATE TRUFFLES RECIPE


It’s the perfect time of the year to offer homemade chocolate truffles for Christmas. Too difficult to do yourself you think?!? Not at all! Check out our easy recipe, but be aware that you’re going to get your hands full of chocolate as you make them, but it’s soooo worth it!

You need:

  • 400 gr good bittersweet chocolate
  • 200 gr soft butter
  • 200 gr icing sugar
  • 4 egg yolks
  • 2 tablespoons cognac
  • 2 tablespoons heavy cream
  • cacao powder

The taste and quality of the truffle is primarily dependent on the quality of chocolate you use! Remember, not all chocolates are the same, so choose well!

Begin by chopping the chocolate with a sharp knife in small pieces and then let it melt in a bain marie. The chocolate needs to cool down after being melted.

Mix the 4 egg yolks with the icing sugar until you get a foamy cream. Add the soft butter and mix well. Gently pour the melted chocolate into the mixture. Whisk in the cognac and the cream, until you get a smooth and homogeneous paste which you refrigerate for about 2 hours.

Using a melon baller or a teaspoon, shape the mixture into round or misshaped bite-size balls before immediately rolling each one in the cacao powder and place on a plate. This step is to simulate the “dirt” that the real truffles grow in… If the mixture is getting too soft, refrigerate until it is firm again to shape and continue the finishing… Cover and place in the fridge until firm.

The chocolate truffles will keep easily for two weeks if refrigerated and not eaten before, bring to room temperature before serving.
