Show-cooking on the beach
During our holidays in Mauritius, we had the great pleasure to assist to a cooking demonstration on the beach. The cook of the hotel did prepare us a chicken curry.
Ingredients:
600 gr chicken (cut in small pieces)
30 gr garlic
80 gr onion
30 gr ginger
20 gr fresh coriander
1 tablespoon of aniseed powder or cumin
3 tablespoons of curry powder
1 tablespoon of turmeric powder
10 curry leaves (carry poulet)
250 gr tomatoes (pomme d’amour)
oil for cooking
salt, pepper
1 green chili (optional)
Method
- slice onion thinly, chop the garlic and ginger
- blend tomato to a puree (cut in small dices if no blender available)
- season and brown chicken pieces in hot oil
- add onion, garlic, ginger and curry leaves, still mixture for approx. 1 minute
- add powder spices and continue to stir for one more minute and add water or chicken stock
- add tomato puree and simmer for 5 to 10 minutes
- check seasoning and sprinkle fresh coriander before serving
Traditional garnish
Plain rice, faratha, vegetables pickles, cucumber and carrot salad
