SALMON ROLLS - FABIENNE'S RECIPE
For my very fist post on the blog, I’d like to share with you this easy-to-do salmon rolls recipe!
INGREDIENTS:
- 125 gr Spinach (frozen)
- 4 eggs
- 50 gr grated cheese
- 250 gr / 4 slices smoked salmon
- 200 gr cream cheese or goat cream cheese (Chavroux)
- Salt, Pepper, some Parmesan cheese and lemon
Preparation time 25 minutes – including baking for 10 minutes – Rest in the fridge for at least 2 hours.
Preheat the oven at 200°c and unfreeze the spinach in the microwave. Scramble the 4 eggs and add the spinach, grated cheese, pepper and salt.
Prepare an oven tray by putting baking paper as well as a thin layer of grated Parmesan. Pour the egg mixture on the tray as flat as possible and bake for 10 minutes. The result should be a square omelette that is as big as the tray.
Take out the omelette and let it cool down. In the meanwhile, prepare a piece of shrink-wrap that will allow you to role the omelette. Turn the omelette on to the shrink-wrap and spread the cream cheese . Add the salmon and sprinkle some lemon.
Roll the omelette as tight as possible in the shrink-wrap.
Put it in the fridge for several hours or prepare the evening before and leave it in the fridge all night.
Before serving, cut into slices. Serve 2-3 slices per person with some salad (arugula salad is very nice to it).
